Vegetable Tower with Feta Slices

A tasty and simple summer dish!

Ingredients:


  • 1 large eggplant
  • 1 large zucchini
  • 1 large sweet onion
  • 1-2 green peppers
  • 1-2 red peppers
  • 2 large tomatoes
  • 8 oz feta cheese
  • 2 cloves of garlic
  • ½ tsp salt
  • ½ cup Taste of Crete Extra Virgin Olive Oil (and extra oil to brush veggies)
  • 4 tablespoons Ta Mylelia Red Wine Vinegar with Fresh Rosemary (or to taste)
  • Oregano, thyme, sage, and pepper to taste

Directions:


  1. Cut the eggplant, zucchini, onions, and tomatoes into ½ inch slices.
  2. Cut the peppers into quarters.
  3. Brush the veggies lightly with oil and season with salt and pepper.
  4. Lightly grill the veggies on each side, careful not to overcook or burn them.
  5. Prepare the dressing by chopping the garlic and sauté in a pan with a little oil for a couple minutes just to release the garlic flavor.
  6. Pour the oil in a bowl and add the garlic.
  7. Whisk in the vinegar, salt, and seasonings.
  8. Cut the feta into thick slices.
  9. Layer the feta with the grilled veggies into small towers.
  10. Pour the dressing over the towers.
  11. Try serving with Ta Mylelia Sun Dried Tomatoes, Olive and Capers.
