Orange-Plum Marmalade Muffins

Ingredients:


  • 1 3/4 cups flour
  • 1/4 cup sugar
  • 2 eggs
  • 1/2 cup Ta Mylelia Orange Plum Marmalade
  • 3/4 tsp. salt
  • 2 tsp. baking powder
  • 3/4 cup milk
  • 4 tbsp. butter, melted

Directions:


  1. Preheat oven to 400 degrees.
  2. In a medium bowl, combine flour, salt, sugar and baking powder.
  3. In a separate bowl beat eggs; add butter, marmalade and milk. Add all at once to the dry ingredients. Stir quickly and lightly until just mixed. Mixture will be lumpy.
  4. Fill greased muffin tins 2/3 full. Bake 20 to 25 minutes. Let cool and glaze top with extra marmalade if you like.
