“Choriatiki” Country Salad
Ingredients:
- 2 firm tomatoes chopped
- 2 small cucumbers chopped
- Mythology roasted red and yellow peppers chopped
- 5-6 Mythology green olives stuffed with almonds
- 7-8 Ta Mylelia Sun-Dried Tomatoes whole or cut into strips
- 3 ½ oz feta cheese cut into small chunks
- 1 cup roughly cut purslane
- 4 tbsps Taste of Crete Extra Virgin Olive Oil
- 1 tbsp Ta Mylelia White Wine Vinegar with Fresh Mint
Directions:
- Mix all the vegetables and purslane in a salad bowl.
- Toss with the oil and vinegar and sprinkle the feta on the salad. Add Cretan rusk chunks for an added crunch.
