“Choriatiki” Country Salad

Ingredients:


  • 2 firm tomatoes chopped
  • 2 small cucumbers chopped
  • Mythology roasted red and yellow peppers chopped
  • 5-6 Mythology green olives stuffed with almonds
  • 7-8 Ta Mylelia Sun-Dried Tomatoes whole or cut into strips
  • 3 ½ oz feta cheese cut into small chunks
  • 1 cup roughly cut purslane
  • 4 tbsps Taste of Crete Extra Virgin Olive Oil
  • 1 tbsp Ta Mylelia White Wine Vinegar with Fresh Mint

Directions:


  1. Mix all the vegetables and purslane in a salad bowl.
  2. Toss with the oil and vinegar and sprinkle the feta on the salad. Add Cretan rusk chunks for an added crunch.
